Tonight it's going to be Pasta with home made Bolognese *drooooolllllllll* & for desert a banana honey muffin!

As for lunch.... broccoli latkes.

I made today filo dough stuffed with Bulgarian cheese (salty, I think you call it greek), eggplant, onions & tomatos... was a delight!

I love eggplant!!!! You should try it fried, it's delicious but very fattening... On my diet I grill it, take the "meat" of it, add some lemon & olive oil.. and I get a delicious eggplant salad. Or stuffed eggplant with rice&meat, yummm! I am turning hungry and it's 1:14 am here, no good! :P

I love almost every veggie (that is known to me at least), the only thing that I don't fancy much is sweet potatos.

I have a recipe for baking it so it's not so fattening. You slice it into 1/4 inch slices, then dip in egg and milk mixture, then dip in breadcrumbs. Place on a cookie sheet that has been sprayed with PAm, or oiled very lightly. you can also drizzle a little oil on them or spray with Pam. Then bake at 350 degrees for 25 minute. They are so yummy. If you are stiill ambitious you can then make them into parmesan eggplant. layer with tomatoe sauce and mozzarilla cheese. Bake for 20 minutes
